Jacob’s Haystack-style Chicken Pie!
This past Sunday when I came home from church, my 3 brothers were waiting for me with a new Dish! Jacob somehow thought it up, and it was one of the best meals ever!!
Jacob is just 15 years old, and this is simple, fun, decorative, and with Homemade Ketchup it was so fulfilling! Plus I usually don't have breakfast before church, so a Hearty Meal after church is so good!

Cook Time: 1 hour and 15 minutes

Servings: 6-9
Ingredients
Directions
- First, thaw the Chicken Pie and Scrapple.
- Next, Pile the scrapple on top of the Pie. Jacob didn’t slice it, he just made a nice round chunk, and put it on the chicken pie.
- Bake it at 375 for 50 minutes.
- Then make 4 small ponds on top of the scrapple, and drop 1 egg in each pond. (We call it a pond or a nest, but it is just a small hole!!)
- Bake again at 375 for 25 minutes.
- It should be ready! So have your table ready, and enjoy Jacob’s Haystack-style Chicken Pie!
Notes:
- We used a 9-inch Pie, but we have 6-inch pies available!
- We used 2 pounds of Scrapple, but that was plenty! (Loose sausage or Burger meat would also work, but Scrapple is a big traditional meat among the Amish.)
- Should serve around 6-9 people, depending on how much they eat!!
- We served with Homemade Ketchup!

Zucchini Bread
This isn't the original recipe, but Mom changed it up a bit, so this is what we use!
Enjoy the Recipe from the Amish Kitchen.
Directions
6 Eggs
2 cups Olive Oil
3 cups Sucanat (a natural sugar)
4 cups Zucchini
6 tsp Vanilla,
4 cups whole wheat flour (or 6 cups pastry flour)
2 tsp salt
2 tsp soda
6 tsp cinnamon
Bake @ 325 for around 1 hour (or until done)

Best Home-made Milkshake ever!
If you want to taste the best Milk-shake ever, here it is! It is super easy to make, and only takes a minute to make! It is absolutely the best I've ever had!
Ingredients
-
(3/4 Cup) Raw Milk
-
(1 Tablespoon) Dandy Blend *a healthy coffee substitute* (available from us, or Dandyblend.com)
-
(1 Tablespoon) Maple Syrup
-
(1 to 2 Scoops) Home-made Ice Cream (preferably Clearview's Vanilla Ice Cream)
Directions
Pour milk into cup or mixing bowl, and add maple Syrup & dandy Blend. Stir real good, then add Ice Cream and stir again, now sit back and enjoy!
I don’t know where that good flavor comes from, but to me it was so delicious!
It is very versatile! You can change the amounts of Dandy Blend and maple Syrup for more amazing flavors!
Or for the best Breakfast drink, mix this recipe but no ice cream! It is our All-time favorite!

Most Delicious Roast Beef Ever!

We served it at our Church dinner this past weekend, and everybody ate more then we expected! We love it cuz it is easy to make, and comes from a cheaper cut of beef! (Serves 2-4 Meals)
Ingredients
-
(around 2 Pounds) Beef Roast (Preferably thick roast)

(2 Cups) Water
-
(2 teaspoons) Salt
-
(1 teaspoon) Black Pepper
-
(1 teaspoon) Garlic Powder
-
(1 Tablespoon) Worchester Shire Sauce (optional)
-
(2 Tablespoons) Maple Syrup
Directions
- Mix everything together (except roast).
- Then let roast soak in this liquid for 24 hours. (Or use meat fork and punch a lot holes in, then just soak for 12 hours.)
- Bake at 250 degrees for 6 hours.
- When done, slice the Meat.
Then with the leftover juice you will make the best Gravy you ever tasted!
For gravy use your own recipe, or here is my Mom’s Favorite:
Gravy with Leftover Juice:
Per 2 cups juice, use 2 Tablespoons Tapioca Starch.
- Mix 2 Tablespoon Tapioca Starch in 1/4 cup water till Starch is dissolved.
- Then mix that water with leftover juice.
- Heat to a Boil. And it’s done!
Now add some gravy to the Meat Roast!
On Monday evening we had this Roast with Mashed Potatoes and Gravy, and it was beyond delicious! Just thinking of the gravy, makes me hungry for more!

Healthy Eggnog

Eggnog is a very old fashioned drink. Usually used as medicine, it's now a well known fancy holiday beverage. Store-bought options are loaded with additives, a ridiculous amount of sugar, and less than 2% egg yolks, plus doesn't taste good at all! Why not make it at home with healthy farm-direct ingredients? After all, it's quick and easy and festive!
Plus almost all the ingredients are available from our Farm, so you support the Cows and Chickens with every ounce you drink!

To Make Raw Eggnog
- Whisk the ingredients together. Done!
To Make Cooked Eggnog
- Whisk the ingredients together in a pot.
- Put on the stove over medium heat. Stir occasionally when cooler and more often when hotter.
- Bring to a simmer. Remove from heat. Serve warm or cold.
Tips:
To get a fuller eggnog: beat the egg yolks until they lighten in color. Then add the other ingredients.
To get a frothy eggnog: beat 4 egg whites until soft peaks form. Then stir into your finished eggnog.
To be extra festive: serve topped with whipped cream and a sprinkle of cinnamon. And, hey, why not add a candy cane, too?
